Sometimes it's so hard to figure out what to cook for dinner. Don't opt for fast food when you can cook some delicious chicken in no time!

When money is sparse, it can be quite difficult to prepare a big, fancy meal or go out to eat. Just the other evening I was digging through my fridge wondering what in the heck I was going to eat for dinner. Luckily, I had some chicken tenderloins and a couple other ingredients to whip together to cook something tasty and fast.

 

 

Sometimes it's fun not to have a recipe in front of you; that's when the culinary creativeness starts to generate great ideas. Here is what you will need:

Chicken tenderloins or breast (whichever you prefer)
Salt & Pepper
Herbs de Provence (a mixture of dried herbs:  savory, marjoram, rosemary, thyme, and oregano)
1 Tbsp butter
2 Tbsp olive oil
1/4 cup chicken stock
1/4 cup dry white wine

Season the chicken on both sides with salt, freshly ground black pepper, and Herbs de Provence. Heat a stainless steel pan over medium-high heat and sear on both sides until a nice, brown crust is formed. Next, lower the temperature to medium-low and add the butter, chicken stock and white wine. Scrape the bottom of the pan (that's where all of the flavor is) and simmer slowly until the sauce begins to reduce and thicken, about 15-20 minutes with lid halfway on. Cooking time may differ depending on how thick the chicken is.

You can eat the chicken alone, add on top of a salad, make a wrap, etc. It is simple and quite delicious. Anyone can cook this! Bon Appetit!
