Is everyone bathing suit ready for Summer? I know it is very hard to get in the best shape possible, but a lot of our appearance has to do with what we eat. It is extremely important to be aware of what we put into our bodies. However, we can't eat celery and cardboard-tasting granola every day; we still want something delicious. So, I have an amazing Summer Greek Pasta Salad I think you and your taste buds will love.

I made this salad last night for the first time, and I was quite surprised by how tasty it was. Not only is it healthy, but it's also filling and satisfying. Here is what you will need:

1 package multi-grain rotini noodles
1 cucumber, cut lengthwise and quartered
1 yellow bell pepper, diced
1 pint grape tomatoes, cut in half
1/2 red onion, diced
1 ounce crumbled reduce-fat feta cheese
1 can cannellini/northern beans, drained
1 clove garlic, minced
1/2 cup extra virgin olive oil
1/2 red wine vinegar
1 Tbsp honey
1 Tbsp lemon juice
1 tsp Dijon mustard
1 tsp dried basil
(You may also add greek/kalamata olives if you'd like)

Cook the noodles according to package directions, drain and let cool.
While noodles are cooking, prepare your dressing so it can chill in the fridge before serving- combine red wine vinegar, honey, Dijon mustard, 1 tsp minced garlic, and lemon juice. While whisking, slowly pour the olive oil and season with salt & pepper to taste.
Cut the veggies and throw into a large bowl.
Add feta cheese, drained beans, and dried basil.
Add cooled noodles and pre-made dressing, mix together well, and season with salt & pepper to taste.
