A delicious, 30-minute meal does exist, and I have the recipe to prove it! For those crazy, busy weekdays, prepare this for the entire family in no time. 

When you've had a long day and don't feel like slaving over a hot stove, do not settle for the drive-thru. Summer time will be here before you know, so let's try to make healthier eating decisions. Even if you don't care about your beach body, it is still important to eat well.

You will need:

1 lb. peeled and de-veined shrimp
Box penne noodles
1 cup cherry tomatoes, cut in half
1 shallot, chopped
3 garlic cloves, minced
Juice from 1/2 lemon
1/2 cup white wine
1/2 cup cooking water from noodles
1 tsp red pepper flakes
Fresh Italian parsley, chopped
Fresh Parmesan cheese

In a large pot of salted water, boil noodles until just Al dente. In a large pan over medium heat, saute the shrimp in 2 Tbsp olive oil until barely pink. Remove the shrimp and set aside. Add the shallot and tomatoes to the pan and saute for 3-5 minutes. Add garlic and saute for an additional 3 minutes.

Add the wine, lemon juice, and red pepper flakes and cook together for 10-15 minutes while the wine reduces slightly. Before the noodles are ready to be drained, add 1/2 cup of the starchy, cooking water to the sauce. (This adds a natural creaminess to the dish.)

Return the shrimp to the pan, add the noodles (as much that will fit), fresh parsley and fresh cheese. Season with salt and pepper to taste. Bon Appetit!
