You might know by now that I really enjoy cooking. I like to test myself with new recipes, some being easy and others intermediate. I am all about a simple, weeknight dinner that doesn't involve very much clean-up. The other day I was flipping through my FoodNetwork Magazine and found the most amazing, delicious recipe ever!How does tomato soup with grilled cheese croutons sound? My mouth is watering right now. The recipe came from Barefoot Contessa, who is one of my favorite Food Network chefs. You have got to try this recipe! It is easy, deliciously delightful and you only use one pot! I made this for my family on Sunday night and they loved it. I made the croutons with a panini machine so it gives it a special crunch that goes perfect with the gooey Gruyere cheese.
