I'm always looking for something simple and delicious to cook during the week, and I get so excited when I find those recipes that are easy to make and taste amazing. Of course, I always want to share my yummy recipes with you! Give this one a try, the kids will love it! 

This recipe is adult and kid friendly because it has the ingredients and tastes adults love, and it's quite cheesy so kids will eat it too. It is Orecchiette with Italian Sausage, Sun-dried tomatoes, and Cannellini beans.

 

 

You will need:

1 package Orecchiette noodles
1 lb. ground Italian sausage (mild or spicy)
1/4 cup chopped sun-dried tomatoes
1 shallot, chopped
2 cloves garlic, minced
1 can cannellini beans, drained and rinsed
2 Tbsp fresh oregano, chopped
1/2 cup mascarpone cheese
Salt & pepper to taste

Bring a large pot of salted water to boil over high heat. Add the pasta and cook until tender, but still firm to the bite, about 10 minutes. Drain the pasta and save 1 cup of the cooking liquid.

In a large heavy skillet, warm 2 Tbsp olive oil over medium-high heat and add the chopped onion. Cook for about 3-4 minutes, until the onions begin to appear translucent. Then, add the sausage and break up with a wooden spoon.

Continue to cook until the sausage appears brown and cooked, and the onions are tender. Add the minced garlic and cook for 2 minutes. Then, add then beans, chopped oregano, and chopped sun-dried tomatoes.

Add the cup of pasta cooking liquid and stir, scrapping up any brown bits from the bottom of the pan. Add the mascarpone cheese and stir until it dissolved into a light sauce. Add the salt, pepper, and hot pasta. Sprinkle with Parmesan cheese and stir until coated and serve. Bon Appetit!
