How could this happen? Chef Jill McCoy and I often compare our physical training and eating routines when we chat every week. She treats her body like a temple. I treat my body like a tent. However, this week I got some alarming news from my very slim and healthy culinary friend.

Jill explained how she had gained a few pounds.  For a guy a few  pounds is what you get at a buffet. For a lot of women a few pounds is aggravating and depressing. Chef Jill is not one to get depressed. She explained that her past few work weeks have had her more on the eating side of restaurants than the cooking side. Here's what Chef Jill is doing to make those few  pounds go away without sacrificing delicious food.

Besides being very flavor and healthy Chef Jill always makes sure her recipes always have a healthy living side to them too. If you ask a lot of dietitians the benefits of nuts are off the charts.Cashews just also happen to be one of my favorites too.

Add in the lean chicken and pump up the flavor profile with some fresh basil and you'll be wanting to drop a few pounds every time you cook. I love the freshness of this dish. If you'll give it a chance you will find that fresh lettuce has a decidedly sweet taste to it. Add in the Asian inspired seasonings of this easy to make entree and you'll be feeling the burn. Well the burning desire to make it again.
