We lost a beloved member of the  Louisiana culinary community today, when Chef Paul Prudhomme passed away at the age of 75. Chef Paul was a great champion of delicious Cajun food, and was world renowned for his recipes, and his many cookbooks. Although Chef Paul was a native of Opelousas, he rose to fame as the executive chef of Commander's Palace in New Orleans, before opening K-Paul's in 1979 in the French Quarter. I have tried many of Chef Paul's dishes, and some of my favorites are below. Try some of these, and if you're not from here, you'll feel like an official Cajun for sure, sha!
