I consider myself to be a pretty good cook, and I love to prepare meals for friends and family. But I have never actually cut up a whole chicken, and frankly, I wouldn't even know where to begin. Now, this is a problem when I want to make gumbo or chicken and dumplings, and my dad, if he were still here, would be horrified!

There are several reasons to cut your own chicken. The first being that it's way cheaper. And you also get the backbone, which means you can make your own stock, also saving you money. So before you go buy that pack of cut up breasts and thighs at your local grocery store, check out this handy video from Melissa Clark at the New York Times below. It's gotten over four million views, so at least she's got our attention. Bon Apetite!
