Chicken Parmesan is a well-known, Italian dish that has been prepared in Italian restaurant kitchens all over. I promise you it tastes even better when it is homemade and comes right out of your oven. Give my simple recipe a try and fall in love!

I always research different recipes to prepare and then try to change them up a bit so they are more of my own. Yesterday I was debating what to make for Sunday night dinner, and Chicken Parmesan came to mind. I never really ever cooked Chicken Parmesan by myself in my own kitchen; however, I was pleasantly surprised about how easy it actually is.

 

You will need:

4 thinly cut, boneless, skinless chicken breast
32 oz. can crushed tomatoes
1 can original Rotel
Fresh Mozzarella
Fresh Parmesan
1 small yellow onion, chopped
3 garlic cloves, minced
1/2 cup Italian breadcrumbs
1 egg
1 package Angel hair pasta
Fresh Italian Parsley
Herbs de Provence
1 Bay leaf
Salt & Pepper

Preheat oven to 475 Degrees. First, you should start with the homemade, marinara sauce. (If you'd rather use your favorite jar marinara, you can, but homemade is so much better!) Heat a couple Tablespoons of olive oil in a medium-size pot over medium heat. Saute the onion until translucent, about 3-5 minutes. Add the minced garlic and saute together for an additional 2-3 minutes.

Next, add the can Rotel and can crushed tomatoes. Season to taste with salt, pepper, 1 bay leaf, and 1 tsp Herbs de Provence. Bring the sauce to a boil and then reduce the heat to low and simmer for atleast an hour. In the meantime, pour 1/2 cup Italian breadcrumbs on a plate and whisk the egg with a splash of water in a shallow bowl. Sprinkle the thin, chicken cutlets with salt and pepper and dip into the egg and then into the breadcrumbs.

Heat a couple Tablespoons of olive oil in a large-size pan over medium-high heat. Once the oil begins to bubble and pop, the breaded chicken is ready to go in. Cook the chicken on both sides for 3-5 minutes, until nicely browned. Place the half-way cooked chicken in a baking dish and evenly pour the homemade marinara sauce over the chicken. Cut the fresh mozzarella and place over the chicken breasts along with sprinkles of Parmesan cheese. Cover the baking dish with foil and place into the oven. Bake for 15-20 minutes with foil on and then an additional 5 minutes with the foil off. Boil the noodles in a large pot of salted water while the chicken is in the oven.

Once the Chicken Parmesan has been removed from the oven, sprinkle with freshly cut Italian parsley. Bon Appetit!
