This cold weather has got me thinking – what can I cook that is hot and comforting? My easy, cheesy version of crawfish fettuccine is just to die for, and I think you are going to love it! The recipe is super simple- check it out!

You will need:
1 package of egg noodles
1 small onion
3 cloves garlic
1 green bell pepper
1 small package mexican velvetta
1 cup half and half
1 package Louisiana crawfish

Season with to taste: 1 Tbsp salt, 1 tsp pepper, 1 tsp onion powder, 1 tsp garlic powder.

Preheat oven to 350 degrees.

Cook the noodles separately in a pot of salted, boiling water.

Meanwhile, sauté onion and green bell pepper for ten minutes, until onions are translucent.

Add 3 cloves minced garlic to onion mixture and sauté for two minutes.

Add crawfish and cook together for five minutes.

Pour in the cup half and half and slice the velvetta into cubes so it melts evenly in the crawfish mixutre. Season to taste.

Once the noodles are al dente, drain them and pour into a 12x9.5 baking dish. Pour the crawfish mixture over the noodles and pop in the oven for 30-45 minutes.

Hope you enjoy this version of my crawfish fettuccine. It's also great for kids, because the noodles are fun and easy to eat!
