I like to say the word pudding. It just sounds fun springing over my tongue and out of my lips. Pudding can be a term of endearment or delightfully tasty treat. In all my years of pudding enjoyment I have always thought of pudding as a dessert.

Most of my pudding adventures came in a can. They called them Snack Packs. I used to take a can of pudding to school in my lunchbox. I was reminiscing about pudding with my own sweet treat of a friend Chef Jill McCoy earlier this week when she startled me with the words that every man longs to hear.

"Have you ever had pudding for breakfast"?

It was if a light that had been dormant was suddenly turned on in my soul. I wondered if there were laws against such goodness so early in the day? I told my Chef friend, "please go on, you have my attention".

Here's your new favorite breakfast treat from the maniacal pudding producing mind of Chef Jill.

Wait ! Cinnamon and Chia? Like the pets you can purchase As Seen On TV? I thought the Texas heat in Austin or a bottle of cheap wine had finally gotten to my culinary creative friend's brain. But, as usual, Chef Jill explained her unique choice of ingredients and flavor.

 

It turns out that Chia seeds are not only useful in providing a hair piece for a terracotta Homer Simpson head, they are quite good for you. Cinnamon also has amazing health benefits too. If you add in the other ingredients as Chef Jill suggests you can have a very tasty and beyond healthy way to start your day.

By the way Chef Jill didn't buy my plea to accept boudin as "pork pudding". I guess we'll have to let her have her way besides she's the one who graduated from Le Cordon Bleu.
