Cinco de Mayo (May 5th) is right around the corner! In honor of the Mexican holiday, I have a simple and absolutely delicious guacamole recipe for you to enjoy.

I love guacamole because it is super delicious and healthy at the same time. Well, at least I'd like to think mine is healthy. If you plan on hosting or attending a Mexican fiesta, this is the perfect recipe to have.

You will need:

3-4 ripe Haas avocados, halved and spooned into a large bowl
1 lime, juiced
2 Roma tomatoes, seeded and diced
1/2 small red onion, diced
5-8 dashes hot sauce
1 garlic clove, minced (optional)
1 tsp kosher salt
1 tsp freshly ground black pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1 Tbsp chopped cilantro (optional)

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Then, I take a knife and slice through the avocados until they are finely diced. Add the lime juice, hot sauce, red onion, garlic, salt, pepper, and onion and garlic powder.
Add the diced tomatoes and mix well. Season to taste add the chopped cilantro if desired. Enjoy with tortilla chips.

Don't forget about our big Maracas in May party May 10, 2014 at Parc International in Downtown Lafayette! There will be great entertainment and tons of fiesta fun.
