Our top two food choices when the weather gets cold are always gumbo and soup. A few nights ago, my good friend made a potato soup that was simply amazing. She told me that it was her grandmother's recipe and I had to have it. I decided that it was too good not to share!

It is very quick and relatively cheap.

Here's the recipe:

Peel and cube 6 - 8 potatoes
Diced one onion
4 cans of chicken broth (or two boxes)
2 cups of water
Slice one stalk of celery
1 tbsp of salt (add more or less as preferred)
1 tbsp of black pepper (add more or less as preferred)
Pinch of basil
Pinch of sugar
2 sticks of butter
3/4 cup of flour
About 1 small carton of heavy cream

Cook down your onions, celery, and flour for a 'light roux.' Then add your water, chicken broth, cream, and spices. Let that cook to a boil. While you are cooking this, you should be boiling your potatoes. Don't let the potatoes get get too soft because they will cook more in the soup itself.

Put the potatoes in the soup when ready and let it sit for about 15 minutes and it is ready to serve. You can also add bacon bits, chopped green onions, shredded cheese and sour cream to make it that much better.
