It doesn't matter whether you are in Alexandria in Central Louisiana, Lake Charles on Louisiana's Gulf Coast, or Vidalia on the fertile soils of the Mississippi Delta, you're going to find some good fried chicken. Fried chicken is one of those wonderful crossover dishes that fits perfectly into the art of southern cooking just as nicely as it fits into the spirit of Cajun and Creole cooking too.
Fried chicken is a meal of "the people". Even those who came from the most humble backgrounds could usually find a chicken to fry for Sunday supper. And here in the South and especially in Louisiana we took that challenge of making "yardbird" on Sunday the kind of meal of which legends are born.

One thing we've found is that cooks who make the best fried chicken do one of two things before frying. They either soak their chicken pieces in buttermilk, that's another Southern fried chicken trick. Or, they soak their chicken pieces in water with baking soda. That's more of an Asian chicken cooking hack but it works to tenderize the meat and really bring out the flavor too.
