It is probably a real shame that I am not exactly sure why we celebrate the 5th day of May as a salute to our Mexican neighbors. When I was growing up I was told Cinco De Mayo was Mexican Independence Day. It isn't, that day is September 16th.

Then I was told that it commemorates a major battle of some war that I have never heard of. It is, but in Mexico it's only one state that really celebrates that. In fact Cinco De Mayo is more of an American celebration of Mexican things than it is a Mexican celebration of Mexican things. Regardless, it's still a party so why not enjoy some of your favorite south of the border treats.

Among ethnic foods, Mexican is my favorite. I really love the smokey pepper flavors, the seasoned meats, the passing of gas later in the evening. It's so delicious and noisy at the same time. I thought I would put together a collection of recipe videos that you can use to create your own Cinco De Mayo at home.
