Happy Valentine's Day to all of you love birds out there! Whether you are celebrating today with your significant other or by yourself, I have a wonderful recipe for you to enjoy. It is my Italian sausage and artichoke pasta. 

This recipe is originally from the lovely, Giada De Laurentiis, but of course I made minor changes. My love and I have been cooking this recipe for years, and it is phenomenal every, single time. The best thing about it is that it is fairly quick, simple, and requires NO seasoning! The ingredients already pack so much flavor, so you won't even need a pinch of salt.

 

 

You will need:

1 lb. hot or sweet (which ever you prefer) Italian sausage, casings removed and sausage should be rolled into mini-balls.
1 box penne noodles
3 garlic cloves, minced
2 jars, marinated artichokes
1/2 cup sun-dried tomatoes, chopped
3/4 cup white wine
3/4 cup chicken stock
Fresh, Italian parsley, chopped
Fresh Parmesan

On medium-high heat, cook Italian sausage balls until browned. Remove to a plate lined with paper towels. Turn the heat down to medium and add the marinated artichokes and minced garlic. Be careful not to burn the garlic. Cook for 2 minutes and then add white wine, chicken broth, and sun-dried tomatoes. Bring mixture to a small boil, until sauce reduces slightly, about 8 minutes.

Meanwhile. salt a large pot of boiling water and cook noodles according to package directions. As the sauce simmers, add the sausages back to the pan and cook together for an additional 15-20 minutes. Enjoy over noodles with fresh Italian parsley and Parmesan cheese. Voila!
