I think I should have went with 'Attention Food Lovers' because, let's be honest, that's really what this is about. However, today's topic is soup; broccoli and cheese soup to be exact.

I will admit that I frequent Jason's Deli in Lafayette and it is usually for their broccoli and cheese soup. It may be safe to say that I am addicted to it. I have officially come to a point where it is a need to find their recipe. I think I have annoyed to guys at work talking about it. So, like I always do, I Googled dat! And here is the recipe that I found:

Ingredients:

  • half a stick of butter
  • handful of baby carrots (shredded)
  • 2 stalks of celery (diced)
  • 3 cups of chicken broth
  • 1 cup of half and half
  • 1 cup of milk
  • 2 heads of broccoli (chopped)
  • 1/3 cup of cornstarch
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of garlic powder
  • 1/8 teaspoon dried thyme
  • pinch of nutmeg
  • 8 ounces of Velveeta (cubed)
  • 1 and a half cups of sharp cheddar cheese (shredded)

Once you have all of your ingredients prepped and ready, here are the directions:

  1. Melt your butter in a large pot and saute your onions in it for about 3 or 4 minutes.
  2. Stir in the chicken broth, half and half, baby carrots, celery, and broccoli; bring to a boil then reduce the heat and simmer for 10 to 15 minutes to let broccoli soften.
  3. Whisk you milk and cornstarch together in a small bowl and pour into the pot while stirring to thicken it up (takes 3 or 4 minutes)
  4. Add in you salt, pepper, garlic powder, thyme, and nutmeg.
  5. Reduce the heat to low and stir in the Velveeta and sharp cheddar cheese.
  6. Continue stirring the mixture until the cheese has melted.
  7. Serve and enjoy!

I can't explain why I am so excited to try this recipe, but I cannot wait. I am not the best cook, but I am always up for trying new ideas. This is at the top of my list.
