How many times has medical science told us that what we like to eat is bad for us? Yeah, it happens all the time. NOT!  So the fact that medical science is championing one of our favorite foods is really exciting to me.

That food, Crawfish. Except, it's not the delicious tail meat that could be leading the way in breakthroughs in curing obesity, diabetes, and Alzheimer's disease. It's the crawfish shells.

Researchers at the LSU AgCenter are currently studying how an antioxidant, astaxanthin, can benefit our overall health. Studies have shown that this substance has an antioxidant activity that is 10 times higher than lutein and beta carotene.

I think it would be wonderful if our beloved Louisiana Crawfish could be a major component in improving the health of people from all over the world. Even people from Michigan and Germany where their fears and concerns over the environmental impact of the creature have struck fear in the hearts of residents.

Personally, I think it's a major breakthrough for medical science to have come up with a food that's good for you and tastes good too. Oh what an age we are living in.
