Thank you to our friends at National Geographic for bringing to the world how we celebrate spring here in Louisiana with the humble crawfish boil. It's hard not to feel sorry for folks who don't have these tasty crustaceans available to them, and National Geographic does a good job relating to the masses how IMPORTANT crawfish is to us cajuns! Enjoy your crawfish boils and etouffee's this weekend, and as we are tearing off the tails and sucking the heads, and getting ready for the annual Crawfish Festival in Breaux Bridge May 3-5, just remember that people travel from all over the world to eat our delicious food right here in Acadiana!
