Everyone always says don't ask how the sausage is made. That's usually a statement that makes people think of something cringe-worthy, but for me, I really want to know what people put in their boudin.

Do you ever wonder what's in boudin? Boudin is so delicious I have never really paused to wonder what is in it. I know there is meat and I know there is rice along with some onion, but what else.

Here are just some of the ingredients that people use to make boudin, and believe me, the recipes can vary widely depending on who you are asking:

  1. Rice
  2. Pork
  3. Pork liver
  4. Chicken liver
  5. Other organ meats
  6. Bell Pepper
  7. Green onions
  8. Celery
  9. Spices (based on what the maker likes)

Now, I am not a maker of boudin, but I surely eat it. People all across Acadiana have secret and/or special ingredients that make their boudin the best versus their competition. Some people I spoke to obviously told me they would not share their entire ingredients list because they don't want anyone copying their recipe.

You can't blame someone for not wanting to give up all the ingredients in their prized boudin. And we are so lucky. There are boudin shops all over Acadiana, and it's place has it's own signature flavor.
