October is a fun month because the weather starts to feel nicer, we can dress up for Halloween, and relive our childhood days by carving pumpkins. My friends and I carved pumpkins last night and as I was pulling the seeds and gunk out of my pumpkin I started to wonder what I could do with the seeds. Little did I know, pumpkin seeds have several, amazing health benefits.

I bought the Pumpkin Masters stencil set that came with carving tools and in the set were several, different pumpkin designs to carve and they were leveled from easy to intermediate to mastery. Well of course, I thought I could carve one of the mastery stencils. Let's just say after I outlined the stencil and began carving, my pumpkin certainly did not look like the picture. So, I figured I would do it the old fashioned way and freehand a funny face. My boyfriend and roommate didn't give up on their pumpkins, so of course theirs looks pretty darn good... over achievers. However, mine is still creative and funny. Can you guess which one is mine?

Let's get back to those amazing pumpkin seeds. Did you know that pumpkin seeds fight prostate cancer and depression, help bladder function, lower cholesterol, and prevent osteoporosis? Isn't that amazing?! They make the perfect snack with 3 simple steps:

1.) Soak your pumpkin seeds in water for about 10 minutes.
2.) Preheat oven to 325 degrees and scatter the seeds on a baking sheet.
