One of the best gifts to give anyone is a specially-prepared meal or treat. There is nothing better than receiving a homemade gift, rather than store-bought. My mom and I debated on what to cook for Dad because we wanted it to be something special but also simple for us, so we aren't slaving in the kitchen all day.

We decided on Chicken Marsala with Almond Blueberry Cookies for dessert - compliments of Giada De Laurentiis. Talk about delicious and no-stress! Click here for the yummy-in-your-tummy Chicken Marsala recipe. I did a little healthy tweaking on the almond blueberry cookies recipe.

You will need:

2 cups whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 stick unsalted butter (1/2 cup)
1 cup sugar
1 egg yolk
1/4 cup soy milk
1 tsp almond extract
2 tsp lemon zest
1/2 cup chopped almonds
1 cup frozen blueberries

In a medium bowl, sift together the whole wheat flour, baking powder, and salt. Set aside.

In another medium bowl, cream together the butter and sugar using a hand mixer. Then, add the egg and beat to incorporate. Add the soy milk, almond extract, and lemon zest.

Gently and slowly, stir the dry ingredients into the wet ingredients in batches. Fold in the almonds, then the blueberries. Wrap the dough in plastic wrap and chill in the fridge for atleast 30 minutes.

Preheat the oven to 375 degrees F. Dollop the cookie mix onto lightly greased cookie sheets. Bake until golden brown around the edges, about 12-15 minutes. Enjoy!
