It's the age old question for people who aren't from here - What's the difference between Cajun and Creole cooking? For those of us who live here, it's as easy as looking AT the dish- I always tell people that cajun cooking is simpler, because the ingredients come from more rural areas, and creole cooking is based a lot on Italian influence and "city" ingredients. The only place to get true Creole and Cajun food is in Louisiana, or at least in the kitchen of someone from Louisiana. You got that right, cher!
