Evidently, there is a whole subculture of food enthusiasts who enjoy the Asian specialty but only when it is prepared in the confines of a gas station. Okay, that's how the concept of "gas station" sushi got started.

Lafayette, Louisiana, is the home of the "best" gas station sushi in all of Louisiana. At least that's the information we found returned to us when we inquired via Google online.

Gas station sushi, like airport sushi, used to be a term that meant gastric distress. That was before modern refrigeration techniques and better attention to food quality and food safety took over. Today's gas station sushi has been vetted for safety and quality and during my frequent stops, because you never really get full on sushi, I have never gotten ill.

But wait, before you get hung up on "where is the gas station," remember the term refers to pre-made sushi, and that's what you'll find at Fishbox Sushi on Settler's Trace in Lafayette.

The concept of Fishbox Sushi is similar to the concept behind Subway sandwiches. You get to personalize your order from what has been created. Fishbox Sushi offers a variety of rolls that have been premade. You may choose a piece or several pieces from several different rolls, creating a custom box of your sushi favorites. Your final price is determined by weight.
I have never visited Fishbox Sushi, so I can't offer a firsthand review, but Yelp! reviewers offer the place 4.4 out of 5 stars, and a reviewer on the Foodies of Lafayette page offered a wonderful review from just a few months ago.
I do like sushi, but I don't think it will ever take the place of boudin in Louisiana's gas stations but then again, I never thought so many people would have such strong opinions about chicken salad. Evidently, they do.
