One of the most beloved food trucks in the illustrious history of mobile food-slinging in Lafayette is making a return.

Viva La Waffle will soon have a brick and mortar location as the brand is taking over in the former Dix Daiqiuris location on Liberty Avenue ( at Kaliste Saloom).

The big announcement was made earlier today via this killer video on the Viva La Waffle Facebook page.

Viva La Waffle as a food truck was started by restaurateur Collin Cormier and was in operation from 2011 to 2015. He closed the food truck at the time to focus on his restaurant, Pop's Poboys, and the Swamp Pop brand.

Earlier this year Swamp Pop was sold.

According to the Acadiana Advocate, Cormier and a group of investors signed a lease last week on the former Dix location. That restaurant/bar closed earlier this summer.

An opening date for Viva La Waffle has not been announced, but Developing Lafayette is reporting that it should be before the end of 2020.
