Have you ever had one of those unhealthy weekends where you drank too much beer and ate too much pizza? Well, I recently had one of those weekends and by the end of it, my body was yearning for something healthy and satisfying.  I needed a detoxifying soup to do the trick. 

I have to thank Twitter for giving me the idea to make a detox soup. I know the word "detox" is a bit odd and doesn't sound yummy, but it is what the body needs sometimes. I searched the good ole internet for ideas and after I read several, I created my own. This is the perfect soup for a long weekend pick-me-up, cold night, and sickness healer.  The picture does not give it justice, but I promise it is delicious! You will need:

2 quarts chicken/vegetable stock
2 medium-sized carrots, peeled and diced
4 cloves garlic, minced
1 can peeled tomatoes, drained and roughly chopped
2 cups fresh green beans, cut into 3/4 pieces
2 medium leeks, (washed well) and chopped
1 can unsweetened corn kernels
Salt & Pepper
Fresh Italian parsley leaves, roughly chopped

Heat a large pot over med-low heat and add chopped leeks, garlic and pinch of salt. Saute together until they begin to soften, about 8 minutes. Add the chopped carrots and green beans and continue to cook together for 5 minutes.
Add the chicken/veggie stock and increase the heat to high until it comes to a simmer.  Add the tomatoes, corn kernels, pinch of salt and pepper.  Once the soup comes to a boil, reduce the heat to low, cover, and cook for an hour. Remove from the heat and add parsley and season to taste. Bon Appetit!
