Got another simple and cheap recipe for y'all! Why go to a Mexican restaurant and spend a bunch of money when you can have a fiesta at your casa? Give these easy, cheesy, chicken tacos a try and fall in love.

The thing I love most about this recipe is that it packs so much delicious flavor with few ingredients. For this recipe, you will need:

1 lb. skinless, boneless chicken tenderloins
1 8 oz. can chopped green chillis
1 dollop sour cream
Soft taco tortillas
1 packet taco seasoning OR make your own taco seasoning- here is how:
1 Tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp crushed red pepper flakes, 1/4 tsp dried oregano, 1/2 tsp paprika, 1 1/2 tsp ground cumin, 1 tsp sea salt, and 1 tsp black pepper. Store in air tight container and use all the time!
Toppings such as:  lettuce, cheese, salsa, tomatoes, etc.

Rinse chicken tenderloins under warm water and pat dry with paper towels. Place chicken onto cutting board and cut into 1-inch pieces and add it to a large skillet over medium-high heat. Sprinkle the chicken with salt and pepper. Once the chicken is cooked through, add the can green chilis and cook together for about 5 minutes. Turn the heat to low and add the dollop sour cream and taco seasoning. If you notice the chicken mixture drying out, add 1/4 cup water and simmer with lid on for an additional 10 minutes.

In another skillet, toast the tortillas and assemble your chicken taco however you would like. This recipe feeds up to four people and will be enjoyed by all. Bon Appetit!
