Sometimes it seems that there are only a few basic foods that I know how to cook. It's making those same basic foods different, unique, and tasty are part of the reason I consult with Chef Jill McCoy everyday. If you're like me and get tired of the same dishes done the same way then maybe it's time you went out on a limb and did a little something different.

Today's Foodie Friday Recipe is a upscale variation of a traditional favorite. That favorite is the roasted chicken breast. Chicken is naturally lean, full of protein, and can be boring as hell if you cook it the same way all the time. That was the challenge for Chef Jill, show me a way to cook chicken where I get all the healthy benefits but have some flavor and a little pizzazz too.

There are some ingredients that country boy cooks, such as myself, don't seem to understand. Goat Cheese is one of those ingredients. It seems pretty artsy and high class for my tastes but once you taste it, you'll find it's really a great cheese to use. It also has a very creamy and smooth texture that blends beautifully with the other ingredients in this dish.

Roasted red peppers are wonderful by themselves but when you add that touch of fresh basil to the mix you get a very exciting flavor profile that takes an ordinary chicken breast and turns it into company coming over cooking.

I think the part I like best about this dish is just how easy it is to make. Compared to my old and boring way of cooking chicken the steps are about the same, the ingredients totally different but easy to work with, and the results amazing. I do hope you will give this one a try, even if it means buying goat cheese for the very first time in your life.
