Shrimp and Penne Creamy Cheesy Pasta
My mouth is already watering and I have not even begun to describe this delicious recipe. If you are like me then you love to cook and are always trying to find new recipes to prepare. However, sometimes there just isn't enough time in one day to cook dinner. I want to introduce this dish to you because it is absolutely amazing and super simple. Your family and friends will love you for cooking this and will request it again.
I discovered this recipe on FoodNetwork.com and normally I like to add things or tweak recipes I find, but this one is perfect just the way it is.
You will need:
1 lb. penne pasta
Olive Oil
1 lb. medium shrimp, peel and deveined
4 cloves garlic, minced
salt & pepper
1 can whole tomatoes
1/2 cup chopped fresh basil
1/2 cup chopped fresh flat-leaf parsley
1/4 tsp red pepper flakes
1 cup white wine (I like Menage a trois chardonnay)
1/3 cup clam juice (this is a key ingredient)
3/4 cup heavy whipping cream
Grated Parmesan cheese
Cook your penne pasta according to package directions.
In a large skillet over med-high heat, add shrimp, garlic, and sprinkle with salt & pepper or any other seasoning of choice.
Cook the shrimp for about 3 minutes, until they are slightly turned pink, remove from skillet.
Add tomatoes, basil, parsley, and red pepper flakes. Cook for about 3 minutes.
Add wine, clam juice, and heavy whipping cream. Bring mixture to a boil.
Once it reaches a boil, reduce the heat and simmer for about 15 minutes.
Add the cooked shrimp, penne pasta and a handful of Parmesan cheese.
Toss together and season to taste!
