I was recently introduced to a very delicious and nutritious meal. I have to give props to my older brother for creating this recipe. I hope he doesn't mind that I share with you. This is a perfect recipe because not only is it easy, it is so tasty and satisfying. Plus you'll feel great eating it because it is great for your figure!

What you will need:

1 large Salmon fillet
3 Roma tomatoes, diced
1 shallot, diced
3 cloves garlic, minced
1/3 cup capers, drained
1 cup Sherry
1 lemon, squeezed
Salt & Pepper
Pinch red pepper flakes
Herbes de Provence seasoning

First, cut your salmon filet into bite size pieces and season with salt and pepper.  Chop onion and mince garlic, then saute in med-large sauce pan for about 5 minutes until onions are translucent.  Add the salmon pieces and cook through for about eight minutes.  Add the chopped tomatoes with all of their juices. Saute the mixture together for about another eight minutes.  Add the cup sherry and lemon juice and seasonings, and cook together for about twelve minutes.  Towards the end of the cooking process, add the drained capers and season to taste with salt and pepper.
