August seems like the birthday month for almost everyone I am close to. I have been celebrating friend's and family member's birthdays all month along, and have certainly enjoyed all of the birthday cakes. I'm sure you are familiar with yummy cookie cake. If you only knew how simple a homemade cookie cake is to make. Give this recipe a try!

There's nothing better than a homemade, sweet creation. The other day I was enjoying my afternoon by watching the wonderful Food Network, and I saw something amazing right before my eyes:  homemade cookie cake. If you or anyone you know has a birthday coming up, I suggest you make a homemade cookie cake.

 

You will need:
1 stick salted butter, room temperature
1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup granulated sugar
1 1/2 tsp molasses or 1/3 cup packed light brown sugar.
1 egg
1 1/2 tsp vanilla extract
1 cup chocolate chips (or more...)

Preheat your oven to 350 degrees. Grease a round pan (pizza pan) or a large, square cookie sheet with butter. In a medium size bowl, sift together flour, baking soda, and salt. In another bowl, mix together sugar and molasses.

In a standing bowl with a paddle attachment (or large bowl with hand-held mixer), beat butter on med-high speed until smooth and creamy, about two minutes. Add the sugar and molasses mixture and beat until well combined. Add egg and vanilla extract, and beat until well incorporated. Turn down the mixer and slowly add the dry ingredients until the dough forms. Add chocolate chips and slowly mix one last time.

Transfer the dough to baking sheet or pizza pan and smooth out evenly across. Bake in the oven for 15-20 minutes, or until golden brown. Cool on a wire rack. Once cooled, you may decorate the cookie cake any way you would like!
