One thing I have learned in my thousands of years on the planet, sometimes you have to make your own kind of sunshine. While the weather in Acadiana may not be perfect for our normal weekend activities of festivals, camping, and enjoying live music. The wet weather will give us a little time to spend in the kitchen creating something new and different.

On this edition of Foodie Friday our resident food freak and former DJ turned Chef, Jill McCoy invites you to try an easy scaled up version of a family favorite. Jill's twist on the taco will have you wanting to serve this Tuesday night classic at your next social soiree.

By the way, don't let the word "achiote" throw you. You've probably already enjoyed the smokey flavor of this Caribbean spice in yellow rice, paella, or other island and Latin  dishes. It's readily available at most major supermarkets and it adds a delicious pop to this dish and many others.

So this weekend if the weather is a little less than perfect where you happen to be, why not turn up the radio, turn on the stove, and exercise your culinary muscles for simple, yet decidedly different take on a family favorite.
