Blueberries are quite plentiful. Stephanie Crist is the blueberry queen around the radio station and she loves to bring the berries back by the bucket full. So I asked our other queen of culinary expertise, Chef Jill McCoy for a recipe that would keep it light and fresh for the summer and incorporate some of those fresh blueberries.

Needless to say we struck a chord with our foodie femme fatale. She loves fresh ingredients and when those ingredients are as healthy as blueberries you better screw your wig on tight because the dish coming back is going to be healthy and delicious.

I have to admit, I really didn't know what mousse was. I thought it was something elegant women put in their hair to give it the three story 1980's glamor look, but it turns out there is mousse you can eat.

The recipe is so simple and it requires a minimal amount of time near the stove. That is great because you don't have to get the kitchen so hot. What you will get is a lot of ooohs and aaahs when your guests start spooning this tantalizingly tart but luxuriously sweet concoction into their mouths. I promise you will think of cheese cake at least once during your enjoyment of this very healthy and fresh dessert made just for you on this Foodie Friday.
