Blackberry Crumb Cake – Foodie Friday
Chef Jill McCoy was back in the Bayou State last weekend. She took some time off from her culinary empire in Austin Texas to travel home for Father's Day. In the Lone Star State you can find Chef Jill working with one of Austin's finest catering companies and you might also read her articles in some of the local food magazines. While visiting with her parents in Alexandria over the Father's Day weekend Chef Jill and I were discussing how it felt to be cooking again in her "home" kitchen. She said the best part about it was being able to make a very special treat for her Dad on Father's Day.
Special is not really a strong enough word to describe this very flavorful and fruity cake. Easy is also another word that comes to mind. Chef Jill is not one to spend a lot of time baking, although she is quite good at the craft, it's not her favorite way to pass the time in the kitchen. She made this recipe to be quick, easy, and delicious and it satisfies all three of those requirements.
Blackberry's are in season right now so finding fresh berries won't be an issue. You might also substitute some of your other favorite berries if blackberries aren't in your favorite grocery store. Chef Jill chose blackberries because of their availability, the delightful flavor, and you guessed it, they are a very healthy food choice.
I found the most difficult part about making this recipe was waiting for the rest of my family to get home so I could eat it. Unlike Chef Jill I am not on a self-imposed exile from the good things in life. I did have several pieces of this delightful cake and if you're looking to create an easy but elegant show stopping dessert for a backyard cookout or more formal dinner gathering this is a recipe you're going to want to try.
