I have always enjoyed blueberries. I love the taste. I love the texture. I add them to cereal I will dump them in yogurt. I can't make a good fruit salad without blueberries. I was discussing the oncoming harvest season of the little purple berries with our Foodie Friday phenom Jill McCoy and that's when I learned something I didn't know.

Blueberries are really, really good for you. They have anti-oxidant properties. They are loaded with vitamins too. They taste good which to me is best of all and they are really versatile in the kitchen.

So we asked Chef Jill to whip up something using blue berries. Whip being the operative word in this recipe.

When I hear the word mousse instead of pudding I think this is going to take forever. Well I am wrong in my assumption. This delightful dessert or healthy snack comes together in less than half an hour. It requires no baking and very little culinary skills. That makes me over qualified to make it.

Let me ask you this, do you like blueberry cheesecake? If you do this blueberry mousse is the answer that your sweet tooth has been craving. While it's fabulously delicious the calorie count is low and we've already extolled the virtues of the almighty blueberry.
