The summer months mean things get thick when we want them to be thin. The air is thick with humidity and we long for the leaner cooler days of fall. Our bellies get thick from all of our delicious South Louisiana favorites and we want them to be thin for the beach. There has got to be a compromise.

That was this week's challenge for Jill McCoy our Foodie Friday contributor. We asked Jill for some healthy flavor that would satisfy a big Cajun appetite but we wanted to watch our waistline for a trip to Holly Beach. Here is what Chef Jill came up with.

It's a Salmon Filet with Mango and Jalapeno Salsa. I can tell your tongue is tingling at the thought of fresh delicate salmon mixed with the sweet tropical mango and the just right heat of a perfect pepper.  The salmon is simple enough to prepare and if you can use a knife and retain most of  your fingers the salsa comes together in a matter of minutes. Then it's just a matter of putting them on a plate and getting some elbow room so you can dig in.

Not only does this delicious dish satisfy the South Louisiana need for a little bit of spice. The pepper heat is accented perfectly by the luxurious flavor and color of the mango. Both jalapenos and mangoes are available at almost any grocery store in the Acadiana area. Fresh Salmon is also readily available too. Like any firm flesh fish it is easy to cook and is very forgiving even if you don't posses the culinary skills of a Le Cordon Bleu alumnus.

For me this is a great warm weather meal. The kitchen does not need to be heated up at all and the freshness of the salsa adds just the right touch. I would say serve this with your favorite chilled beverage and invite some friends for a great night of good food and good company.
