Her message to me read " I need a manicure and some breakfast tacos is that too much to ask"? Sometimes it's the little things that help us over the hump in life. The message was from our resident Foodie Friday Femme Fatale of the frying pan Chef Jill McCoy. The translation of that message was I want to just slow down and simplify.

That's what started this week's Foodie Friday conversation. Sometimes we get over stressed. It might be the job, the kids, a boyfriend, traffic, or some other outside activity we aren't looking forward too. That's when some of our favorite treats can soothe the soul.

In my mind there is nothing better for doing that than old fashioned milk and cookies. I asked Chef Jill is there a cookie recipe that you could create that would make the memories of my childhood smile but not cause the waistline of adulthood to grow larger than life?

If you aren't aware just how good oatmeal is for you then take my word for it. It's the real deal. If you add just a bit of sugar, some flour, some butter, and a little know how you can turn that bland breakfast food into an exciting reminder of a simpler time.

What I really liked about these oatmeal cookies is the fact that they weren't grainy and crumbly. They had a nice firm texture that stood up well to a glass of milk. They were sweet but not too sweet. The nice crisp around the edges was a perfect contrast to the soft and tender inside of the cookie.

This is a great recipe that will pack perfectly for a beach trip or be a wonderful snack break in a Ziploc bag. Give this one a try. It's easier than you think and more delicious than you know.
